Banana Protein Muffins🍌💪🏼🧁
Found this recipe online and I think these are yummy! Each muffin contains around 130 calories and 10 grams of protein (I added chocolate chips so I increased the calories some when I logged it) Ingredients - Ripe Bananas: 2-3 medium, very ripe Protein Powder: 1/2 cup (I used vanilla whey) Almond Flour: 1/2 cup Oat Flour: 1/2 cup (I used all-purpose flour) Baking Powder: 1 teaspoon Honey or Maple Syrup: 1/4 cup (I used honey) Egg: 1 large Vanilla Extract: 1 teaspoon (I didn't have any so I substituted maple syrup) Optional Add-ins: Chocolate chips or nuts for extra flavor Instructions - Preheat the Oven: Preheat your oven to 350°F (175°C) and line a muffin tin with liners or grease it lightly. Prepare the Bananas: In a large mixing bowl, mash the ripe bananas until smooth. For a better texture, you can blend them into a puree. Mix Wet Ingredients: Add the egg, honey (or maple syrup), and vanilla extract to the mashed bananas. Mix until well combined. Combine Dry Ingredients: In another bowl, whisk together the almond flour, oat flour, protein powder, and baking powder. Combine Mixtures: Gradually add the dry ingredients to the wet mixture, stirring until just combined. Be careful not to overmix. If using, fold in chocolate chips or nuts at this stage. Fill Muffin Tin: Scoop the batter into the prepared muffin tin, filling each liner about 3/4 full. Bake: Bake in the preheated oven for 18-24 minutes, or until a toothpick inserted into the center comes out clean. Cool and Store: Allow the muffins to cool in the tin for a few minutes before transferring them to a wire rack. Store in an airtight container for up to five days, or freeze for longer storage. Nutritional Information Calories: Approximately 130 per muffin Protein: About 10 grams per muffin

Being patient with recovery
So, I have been coughing for nearly a month now and recently sustained intercostal muscle strain from the violent coughing in the night. This has really made me pause to focus on recovery. I am limited in exercise but makes it a point to stay consistent with my steps whenever possible. I'm reminded through this that haste will not aid my recovery but consistency would. Consistency with my protein intake, my calories, with being mindful of my food. It is a test of my disciplined self who cannot stop moving. I hope that anyone who may be going through an injury recovery will find the patience to stop and ensure that the body recovers well before going hard again.
