Found this recipe online and I think these are yummy!
Each muffin contains around 130 calories and 10 grams of protein (I added chocolate chips so I increased the calories some when I logged it)
Ingredients -
Ripe Bananas: 2-3 medium, very ripe
Protein Powder: 1/2 cup (I used vanilla whey)
Almond Flour: 1/2 cup
Oat Flour: 1/2 cup (I used all-purpose flour)
Baking Powder: 1 teaspoon
Honey or Maple Syrup: 1/4 cup (I used honey)
Egg: 1 large
Vanilla Extract: 1 teaspoon (I didn't have any so I substituted maple syrup)
Optional Add-ins: Chocolate chips or nuts for extra flavor
Instructions -
Preheat the Oven: Preheat your oven to 350Β°F (175Β°C) and line a muffin tin with liners or grease it lightly.
Prepare the Bananas: In a large mixing bowl, mash the ripe bananas until smooth. For a better texture, you can blend them into a puree.
Mix Wet Ingredients: Add the egg, honey (or maple syrup), and vanilla extract to the mashed bananas. Mix until well combined.
Combine Dry Ingredients: In another bowl, whisk together the almond flour, oat flour, protein powder, and baking powder.
Combine Mixtures: Gradually add the dry ingredients to the wet mixture, stirring until just combined. Be careful not to overmix. If using, fold in chocolate chips or nuts at this stage.
Fill Muffin Tin: Scoop the batter into the prepared muffin tin, filling each liner about 3/4 full.
Bake: Bake in the preheated oven for 18-24 minutes, or until a toothpick inserted into the center comes out clean.
Cool and Store: Allow the muffins to cool in the tin for a few minutes before transferring them to a wire rack. Store in an airtight container for up to five days, or freeze for longer storage.
