One of those ground pork sausage in a plastic roll (or less if you want less meat) 20 oz of shredded hash brown potato (thawed) or chopped sweet potato Green red yellow peppers chopped/diced 1/4 cup onion diced Good culture cottage cheese A little cheddar cheese Mix in a bowl: cup of milk or almond milk/ alternative milk,6-8 eggs or egg whites, a little Salt pepper Mash the sausage in a pan and cook it til no pink; Toss it in a 9x13 casserole dish Add the thawed hash brown potato pieces, peppers, onion. Salt pepper, cottage cheese (mix it around) and then pour the eggs/milk over it.
