Today for fun I made some ginger jelly and used the strained pulp to make some ginger ice tea too.
I grated a knob of fresh ginger, tossed the pulp into water, simmered, then let it steep until it was just right. Added a splash of lime juice, a tiny pinch of salt, stevia to taste before straining and adding agar to thicken it just right. Yum! Great too for making glazes/sauces for tofu/veggie bowls.
