High Protein Salad
Saw Epic Mint Leaves YT video with this recipe today and thought I would share it here too. He estimates the nutritional content as: Protein Content Total: 49 g plant-based protein 200 g smoked tofu = 19 g protein 120 g tahini = 30 g protein - 1 package (200 g) smoked tofu - 2 carrots ½ cup (120 ml) shaved into ribbons - ½ cup tahini (or almond butter) - ½ cup (120 ml) water - 2 Tbsp lemon juice - ½ tsp each garlic powder, onion powder, dried dill, salt

Okay so I'm not sure where to post but the video said to post so here it goes. Day 1: June 2-I watched the first video and posted here seeking if anyone else wanted to join in. I accomplished my planned Upper Body WO. Day 2: June 2 Video 1 of Week 1: Why did you join the challenge? Its the next thing in the "Classroom" section. I joined Vegan Squad to be a part of this community. What is the goal? My short-term goal is to adjust my eating plan, as John outlined to the 40/40/20 and calorie range recommended for where I'm at now. I'm working on rebuilding strength after a health set back. I've been otherwise healthy life long and want to recover my strength. What are you committing to? Following through on achieving the 40/40/20 goal or as best as I can do daily. Current roadblocks I'm overcoming: My most recent work contract was unexpectedly bumped up (promotion) then ended just as unexpectedly. Meanwhile I've lost my source of income, insurance, and the first role I received afterwards had a massive data breach and now I'm hoping my identity isn't stolen on line while I'm focusing on what I can control: What goes in my mouth and what I'm doing to build back my strength after the health issues I went through. Today's WO is focused on Core and Posterior Chain.

Week 1 Results
Today I've been here about a week. So far I've learned from the Classroom videos I'm not consuming the right macros to meet my goals. I'm now in the process of switching things up. My daily average intake was too high for fats, too low for calories, protein, and carbs to meet my goals. While I've only just started making the effort about 4 days ago, I think I feel stronger already switching the macros. Today, I'm making my unique version of slow cooked baked beans and they are in the slow cooker to cook all day long--smelling amazing, sausage seasoning blend (tastes great with any bean/VWG combo), and curry powder to spice things up. I saw a short on social media which showed vegan sausages being made with rice paper as the casing. I may give that a try. Also, I chatted with AI today about making vegan pepperoni which tastes amazing within my allergy limitations/new macro goals. It gave me a fun idea I may try next if I have the ingredients on hand--pepperoni infused oil to layer into recipes for flavor.

@Kian Mokhtarian That's the shocking part. I don't use oil(s) when cooking for a few decades now. So it was super surprising. It seems different apps/people have very different suggestions. The app I was using recommended a plan which wasn't working for me.

Sometimes as a vegan this world feels really dark and really heavy and really lonely. And I'm not going to lie, I feel like I was working myself into an early grave because a part of me didn't want to be around all this suffering anymore. How can people I love, even my family, contribute to this pain and suffering? Seeing what we do to the animals and the people every single day, it's heavy. It's heavy on my heart. And I found through this Vegan Squad family that I think I can do this. I think I can be here. You guys have encouraged me. You've all coached me. It’s been a team effort. It took all of you, not any one of you. It took all of you to get me to this point where I can actually love myself and want to be here. So I want to give you guys a shout out and just say thank you all for making my life worth living. Thank you for making this the best thing I've ever been a part of in my life. And I would not want to do it without all of you. So thank you for encouraging me to love myself and try to make this world a better place while we're still here. I’m grateful for all of you. What’s one thing you are grateful for this week?

@John Thomas Vegan Squad Coach Thank you for your kindness. I've learned so much since being here! Like my macros are out of alignment with my goals--no wonder if seems to be so hard to obtain them! I'm adjusting those now.
Classroom - SELECT THE RIGHT MEAL PLAN FOR YOU ?
Okay, I'm following along with the select the right meal plan for you. It asks us to enter our weight, height, etc in the TDEEcalculator.net website. It says "Body Fat% (Optional)" Should I also enter that from my Renpho scale? What's recommended on that?
