🍄 Raw Vegan Garlic Mushroom “Stroganoff Bowl”
This is one of those meals that feels warm, grounding, and comforting… but still keeps your body in a cleansing + repairing state ✨
Perfect for dinner when you want something more “filling” without slowing your detox.
🛒 INGREDIENTS
  • Mushrooms 🍄
  • 2 cups mushrooms (cremini or button), sliced
  • 1 tbsp coconut aminos
  • 1 tbsp lemon juice
  • 1 tsp olive oil (optional)
  • 1 garlic clove (minced)
  • Pinch sea salt + black pepper
Creamy Sauce 🥣
  • ½ cup soaked cashews
  • ¼ cup water
  • 1 tbsp lemon juice
  • 1 tsp onion powder
  • 1 small garlic clove
  • 1 tbsp nutritional yeast (optional)
  • Pinch salt
Base 🥒
  • 2 zucchini (spiralized into noodles)
👩‍🍳 INSTRUCTIONS
1. Marinate the mushrooms 🍄
Mix everything together and let sit 15–20 minutes
👉 This softens them and gives that “cooked” texture
2. Blend the sauce 🥣
Blend until smooth + creamy
Add more water if needed
3. Build your bowl ✨
  • Add zucchini noodles
  • Top with mushrooms
  • Pour over the sauce
  • Toss gently

  • Fresh parsley or dill
  • Cracked black pepper
