Ingredients (1 large bowl / 2 servings):
• 2 cups finely chopped red cabbage
• 1 cup diced cucumber
• 1 cup shredded or finely diced carrot (about 2 medium carrots)
• 1 ripe avocado, diced
• 1/2 cup fresh blueberries
• 1/2 cup pomegranate seeds
• 2 tablespoons fresh chopped parsley
Dressing:
• 2 tablespoons extra virgin olive oil
• Juice of 1/2–1 lemon
• Optional: pinch of sea salt
Instructions:
- Add cabbage, carrot, cucumber, parsley, blueberries, and pomegranate to a large bowl.
- Gently fold in diced avocado last so it stays chunky.
- Whisk olive oil and lemon juice together.
- Pour over salad and mix lightly.
- Add a small pinch of sea salt if desired.
