MEAT MUFFINS RECIPE
8 oz. softened cream cheese
5 eggs beaten
1/2 cup grated Parmesan cheese
*16 oz cooked sausage crumbled (I use Jimmy Dean hot)
**2 cups grated, off the block (not pre-shredded) cheddar cheese
Mix all together and put evenly into sprayed muffin tin.
Bake at 350° for 30-35 minutes depending on your oven
This makes 12 regular size muffins
*you can substitute 1 pound of cooked salmon chopped
**substitute smoked Gouda goes well with the salmon
I’ve also used 1 pound of cooked crumbled bacon and Swiss cheese in place of sausage and cheddar cheese
