💯 gluten free hidden heart cake.
I made this for my hubby for valentines 💝. He doesn't need to be gluten free but I wanted to sample a slice 😜. I'm pleased with it. It turned out well & is delicious. It's a Becky Excell recipe if anyone's interested in having a go.

Really quick gluten free meal I just made now realizing I had to eat:
Ingredients I found in my fridge 250 g smoked tofu cut into cubes Roast potatoes from last night I had left after doing them in the air fryer Fresh soya bean spouts I bought yesterday… it says 200g on the pack Pure sesame oil Sesame seeds Method: Basically invented it as I made it, I put the cubed tofu with last nights roast potatoes in a pan: turned up the heat high, added a bit of extra virgin olive oil, then tossed all, I then added some pure sesame oil, a bit of teriyaki sauce (labelled gluten free), kept the heat high, added a tiny bit of gluten-free oyster sauce, tossed it again, then tasted and added a tiny bit of salt and a tiny bit of sirachia sauce.. tossed it/ or mix it with a spoon… I felt something was missing so I just added some sesame seeds, mixed it, then just before plating added a bit more sesame oil… it came out nice, but began with an emergency meal with ingredients in my fridge… I did actually invent as I was going along, but next time I’ll weigh ingredients and make up a proper recipe 😅 I did surprise myself though at how fast I managed to make something up so quickly when I was just asking a gluten eating friend who fells unwell if he had eaten xx I’ll try and post pics, it is not the perfect plating and doesn’t have the right colours, but it surprisingly came out well and I have another portion for lunch tomorrow xx I have just proved to myself that we can actually just make something fast even if we can’t eat gluten. Just make sure all the ingredients that need to be labelled gluten free have the label when you buy them 🙏😘xx

🌮 Tasty Tuesday: Taco Loaded Potatoes
This is one of those meals that feels fun and satisfying, but still supports your goals! It’s packed with protein, full of flavour, and a great option when you’re craving something a bit different from your usual meal prep. 📊 Per serving: 626 calories | 53g protein | 37g carbs | 29g fat Here’s what you’ll need 🛒: - White potatoes (300g) - Avocado (100g) - Onion (60g) - Olive oil (½ tbsp) - Red bell pepper (100g) - Lean beef mince (300g) - Grated cheese (60g) Seasoning:1 tsp smoked paprika, 1 tsp ground cumin, 2 garlic cloves (crushed), ½ tsp chilli powder, salt and pepper to taste Optional: fresh coriander, lime wedge, 10g gluten-free nacho chips (crumbled) Here’s how to make it 🧑‍🍳: 1. Toss the diced potatoes in ½ tbsp olive oil, salt, pepper, and optional paprika. 2. Place in the air fryer at 200°C for 15-18 minutes, shaking halfway, until golden and crisp. 3. Heat a non-stick pan over medium heat and add the beef mince. Cook for 4-5 minutes, breaking it up until browned. 4. Add the onion, red pepper, and garlic. Sauté for 3-4 minutes until softened. 5. Stir in the smoked paprika, cumin, chilli powder, salt, and pepper. 6. Add the chopped tomatoes and simmer for 5 minutes, stirring occasionally, until slightly thickened. 7. Divide the potatoes between two bowls and spoon the beef mixture over the top. 8. Add avocado slices. 9. Sprinkle with grated cheese, fresh coriander, and optional crushed nacho chips (5g per bowl). 10. Serve with a squeeze of lime. Love, Ella 🧡 PS. We had this for dinner. It was delicious & I could've eaten more. I had to adapt it a bit as I can't tolerate corn so omitted the Tacos. I highly recommend.

Sugar free chocolate cake
Hey team, Can't remember where this recipe is from but I made it this week & it was good! Would recommend serving with ice cream or yogurt to go with the chocolate 😊 Combine: - 8 chopped dates - 3 eggs - 1/4 cup olive oil - 1/3 cup coconut milk Blend until smooth, then mix in: - 1/4 cup cocoa powder - 2/3 cup almond flour (recipe asked for chestnut flour but I substituted) - 1.5 tsp baking soda - 1/3 tsp cinnamon Finally, add: - 1 tsp vanilla - 2 tbsp orange juice - 2 tsp orange zest Bake at 180°C for ~30 mins, a knife should come out clean. Top with chocolate ganache: - 1/3 cup chocolate chips - 1/4 cup milk (I used canned coconut milk) Melt these together & mix until smooth. It's a bit runny so wait until cool enough to spread on cake (I didn't and it got a little messy 😅) Pictured: half of the cake left after 2 days...I may have had like 2 pieces a day lol
