🌮 Tasty Tuesday: Taco Loaded Potatoes
This is one of those meals that feels fun and satisfying, but still supports your goals! It’s packed with protein, full of flavour, and a great option when you’re craving something a bit different from your usual meal prep. 📊 Per serving: 626 calories | 53g protein | 37g carbs | 29g fat Here’s what you’ll need 🛒: - White potatoes (300g) - Avocado (100g) - Onion (60g) - Olive oil (½ tbsp) - Red bell pepper (100g) - Lean beef mince (300g) - Grated cheese (60g) Seasoning:1 tsp smoked paprika, 1 tsp ground cumin, 2 garlic cloves (crushed), ½ tsp chilli powder, salt and pepper to taste Optional: fresh coriander, lime wedge, 10g gluten-free nacho chips (crumbled) Here’s how to make it 🧑‍🍳: 1. Toss the diced potatoes in ½ tbsp olive oil, salt, pepper, and optional paprika. 2. Place in the air fryer at 200°C for 15-18 minutes, shaking halfway, until golden and crisp. 3. Heat a non-stick pan over medium heat and add the beef mince. Cook for 4-5 minutes, breaking it up until browned. 4. Add the onion, red pepper, and garlic. Sauté for 3-4 minutes until softened. 5. Stir in the smoked paprika, cumin, chilli powder, salt, and pepper. 6. Add the chopped tomatoes and simmer for 5 minutes, stirring occasionally, until slightly thickened. 7. Divide the potatoes between two bowls and spoon the beef mixture over the top. 8. Add avocado slices. 9. Sprinkle with grated cheese, fresh coriander, and optional crushed nacho chips (5g per bowl). 10. Serve with a squeeze of lime. Love, Ella 🧡 PS. Keto bread!
Hi everyone! I tried out another surprising bread recipe and it turned out really good, so thought I'd share. This is a keto gluten free bread recipe I saw on YouTube (Ela Vegan channel). It basically has zero carbs - which I didn't think was possible for bread! I was doubtful this would work, but it did! You need: - 240g whole golden flaxseeds - 40g psyllium husk powder - 2 tsp baking powder - 4g salt - 320ml hot water And here's how you make it: 1. Pre-heat your oven at 180°C - set it to fan heat 2. Grind the flaxseeds to a fine powder (I used my Thermomix, but I guess the best is to use a spice or coffee grinder) 3. Put the flaxseed powder in a bowl and add the psyllium husk powder, baking powder and salt. 4. Mix 5. Add the water and mix. I had to add about 2 tbsp of water as it was a bit too dry. 6. Form this into a bread and place on a non-stick baking paper 7. Bake for 50 minutes My bread almost tripled in size, it was quite impressive! It tastes really nice. The only thing I'd say is the texture is quite light. I like it but I prefer my usual loaves of gluten free bread that have a bit more "substance", if that makes sense. Anyway, hope this inspires someone! Definitely an easy loaf to make and it's great that it's without carbs.

@Julia Dee thank you Julia! I can't get over how surprising this recipe is 😅 I mean, when I first saw the recipe, I thought "This can't possibly turn out good"! But actually, it's really good and super easy to make!

Living with with family who aren’t GF
Hey, me again😅 Anyone who lives with family who aren’t Coeliac/GF? How do you operate? What is separate? Do you share cutlery? Air fryer if using inserts? How do you go to other families houses/ visit friends and eat where you don’t have your GF sanctuary… pans, utensils, plates, trays etc? Last thing… Anyone with Dermatitis Herpetiformis (DH)?😩

I live with my husband and kids - none of them are gluten free. I cook the same thing for everyone - so everyone is mostly on an imposed gluten free diet 😂. The only real exception is bread. They have their bread in a separate cupboard to mine and I have my own gluten free toaster. I don't spread butter on my toast (I don't like it), but if I did, I'd have to have a separate gluten free butter, because it gets full of crumbs. For cooking, I use separate butter and really make sure that my husband and kids don't use it. Hope this helps.

Hey everybody! 🤎 I've been trying to find a sustainable way to accurately track my steps per day. I would prefer to not use a smart watch, but I've been interested in either something small like an old-school pedometer or (on the other side of the map) something of a like an ultrahuman ring. Does anyone have any recs? I guess my worry with an old-school pedometer is that I don't want anything clunky to worry about losing during my day. Thanks ladies!

Hi Jacinda! I used a fitbit for a few years and it worked great. I found it good because it was light and a little like a watch (but I didn't really want a smart watch either, so that was a good compromise). It wasn't too expensive either. I stopped wearing it after a while as I realised that I was reaching my step goal easily (having four kids helped with that 😂), but it was great!
