I had a go at these today. The loopy whisk GF chocolate chip muffins. I'm very pleased with how they turned out.

🍝 Tasty Tuesday: One Pot Chicken BBQ Pasta
If you hate cooking and washing up but still want something high protein and satisfying... this one’s for you! This One Pot BBQ Chicken Pasta is rich, filling, and packs over 50g of protein for 500 calories! 📊 Nutrition: 504 calories | 50g protein | 66g carbs | 4g fat Here's what you'll need 🛒: - 600g diced chicken breast - 80g BBQ sauce (+ extra to drizzle) - 1 tin chopped tomatoes - 1 red onion (diced) - 1 red pepper (diced) - A handful of spinach or any greens - GF pasta - 40g low-fat soft cheese (can use lactose-free too) - 1 chicken stock cube (in a mug of hot water) Season the chicken generously with salt, pepper, chicken seasoning & garlic granules. We use Kallo for the chicken stock! Here's what to do 👩‍🍳: 1. Fry the onion & pepper in a deep pan 2. Add the chicken and season well 3. Stir in spinach and cook until chicken is nearly done 4. Add chopped tomatoes, chicken stock & pasta 5. Cover and simmer until the pasta is cooked 6. Turn off the heat and stir in the soft cheese 7. Drizzle with BBQ sauce if you fancy We used this pasta from The Nuffin Man! I'm going to do this for dinner tonight, it looks delicious. I'll have to adapt some of the ingredients though as I can't tolerate high fodmaps.

Yes please 🤩 These oat bars are perfect for breakfast on the go, afternoon snacks, or something sweet after dinner, all while being gluten-free and full of fibre too! Bake once, snack all week! 📊 Nutrition (per bar - 9 total): 166 calories | 10g protein | 15g carbs | 6g fat What You’ll Need 🛒: - 120g GF oats (blended into flour) - 2 large eggs - 100g full-fat lactose-free Greek yoghurt - 300ml milk (dairy or plant-based) - 30g chia seeds - 60g vanilla vegan protein powder - 1 tsp baking powder - 1 tsp vanilla extract (optional) - 40g dark chocolate chips - 80g fresh raspberries (or frozen – add just before baking) - Pinch of salt How to Make Them 👩‍🍳: 1️⃣ Preheat oven to 180°C (fan 160°C) and line an 8x8” tin with parchment 2️⃣ Blend oats into flour 3️⃣ In a bowl, whisk eggs, yoghurt, and 100ml milk & vanilla until smooth 4️⃣ Stir in oat flour, chia, protein powder, baking powder, and salt 5️⃣ Add the remaining milk slowly until you get a thick brownie-like batter, you may not need to use all the milk 6️⃣ Fold in chocolate chips + raspberries (save some for the top) 7️⃣ Pour into tin, smooth the top, add remaining toppings 8️⃣ Bake 20-25 mins until golden + just set in the centre 9️⃣ Cool fully before slicing into 9 bars Love, Ella 🧡

These look great, I'm going to have a go at making them when I can tolerate gf oats. Hopefully will be soon.

This was a quick attempt ahead of the holidays so I wasn't sure what to expect, but was pleasantly surprised by the results!
