Progress
Day 24, and still on track. Although my steps have decreased this week due to work, hopefully I'll manage more this weekend with basketball training 🏀 Loving the food recipes that have been provided by @Mark Bryce and everyone else that has shared. For the first time ever, I'm really enjoying healthy food and I've not strayed to the indulgence 🤣 although, at times I do miss a Danish pastry. So far I've lost 21 pounds, and my clothes are feeling a little baggy! I've even managed to get back into a slim fit shirt! I hope everyone is OK and also still enjoying the process as much as I am 💪😁

Muffin tin omelette
Presented with these beauties when I got home today. Each one will be used as a treat as part of my daily snack box, with my fruits and warm lemon drinks. Muffins made with: chopped oregano, 8 x eggs, red peppers, feta cheese, ground pepper, spinach, black olives and diced onions, mixed with 2 x tablespoons of virgin olive oil. All then mixed, and baked in the oven.

Day 30 Tea
Chicken breast, stuffed with roasted red peppers, sundried tomato pesto, and feta cheese. Served with steamed stem broccoli. Filling and delicious 😋

One of my own….
Sweet Potato, Lentil Coconut (Crème - Vegan) Curry with Spinach, Garlic, Salt, Onion, Pepper, Coriander, Peppers, tomato. Chop up Onion and Garlic and cook for 2 min in Coconut Oil, add curry spices, salt, pepper and two finely chopped salad tomatoes, fry off for 5 min. Add coconut crème, lentils, blast the sweet potato in the microwave for 4 min with a splash of water, add all other ingredients and let it simmer for 40-60 min.
