This recipe makes enough for 2 servings 😋
The Basil gives it an Italian taste 🇮🇹
4 courgettes
½ cup soaked cashews (or macadamias if you want it extra silky)
1-2 cloves garlic
2 tbsp nutritional yeast
1 tbsp tahini
½ avocado
1 lime
Red onion
Plant milk or water
Sea salt & black pepper
Fresh Basil (you could blend into the sauce but I sprinkled on top).
Blend the sauce: cashews, avocado, garlic, tahini, lime, nutritional yeast, liquid.
Spiralise/peel/shread courgettes.
Lightly salt and let sit for a couple of minutes.
Add onion to courgettes before combining with sauce
Herbs on top, crack of pepper… maybe a drizzle of olive oil if you fancy 😉
