for Thursday dinner this week we are diving deep into cruciferous vegetables. I felt that was appropriate given that this is during our 7-day weight loss challenge. Cruciferous vegetables are Sulfur containing and they get their name from the Latin word cruciferae, which means “cross bearing,” because the plants have flowers with four petals that look like a cross.
Cruciferous vegetables are rich in supercharged anti-cancer and anti-inflammation compounds. When eaten regularly, they are linked with lower rates of many chronic diseases, including cancer and heart disease.

1 lb. jumbo asparagus
1 small green or red cabbage
1 large or 2 medium zucchini
1 lb. Brussels sprouts
1 lb. broccoli crowns
1 bunch Lacinato (Dinosaur) Kale or curly green kale or red kale
1 orange
1 lemon
1 medium red onion
4-6 cloves peeled garlic
1 bunch flat leaf parsley
