RECOMMENDATION - ALWAYS share with the waiter or chef that you are deathly allergic, sensitive to oils like Canola (the most widely used culprit). You can joke with them that if they do put it on your food , just have an ambulance nearby. Then they usually get that you're serious and it's not "just a preference"
Ask for grilled meat or veggies or steamed veggies.
Oils, even salad dressing, sauces on the side. Check the label or ask the server.
Another sneaky hiding spot? - Is their bread sourdough? - how long is it "soured". Do they add vegetable oils?
