Ingredients
Wet
- ¾ cup Fairlife protein shake (180 ml) ← reduced from full bottle
- ½ cup nonfat Greek yogurt (120 g)
- ½ cup liquid egg whites (120 g)
- 1 whole egg
- ½ banana, mashed (~60 g only — trust me 😉)
- 2 tbsp maple syrup
- 2 tbsp allulose
- Zest of 1 lemon
- Juice of ½ lemon
- 1 tsp vanilla
Dry
- 1½ cups almond flour (150 g)
- ⅓ cup oat flour / blended oats (35 g) ← increased for structure
- 1 tsp baking powder
- ½ tsp baking soda
- Pinch salt
- 1 oz Walnuts (optional)
Mix-ins (scaled back so it bakes firm)
- ½ cup grated carrot (60 g — squeeze moisture out!)
- 2 tbsp blueberries (20 g)
- 2 tbsp raspberries (20 g)
- 1 small date, micro-chopped (10 g)
Baking Instructions (important!)
- Heat oven to 350°F / 175°C
- Line loaf pan with parchment.
- Whisk all wet ingredients until smooth.
- Mix dry ingredients separately.
- Fold dry into wet.
- Fold in carrot + berries + date.
- Pour batter into pan.
- Bake 50–60 minutes👉 At 40 min loosely tent with foil.
- Toothpick should come out mostly clean with crumbs — NOT liquid.
- Let cool in pan 15 min → transfer to rack.

🍋 Creamy Lemon Butter-Cheese Frosting
Ingredients
• 2 tbsp softened butter (28g)
• 2 wedges Laughing Cow (about 42g total)
→ Use Light if you want lower fat
• 2–3 tbsp powdered monk fruit
• 1–2 tbsp lemon juice
• Optional: ½ tsp lemon zest
• Tiny splash Elite shake if needed to thin (VERY little)
How to Make It
1. Make sure butter is softened (not melted).
2. Beat butter + Laughing Cow until smooth.
3. Add monk fruit and mix.
4. Add lemon juice slowly — don’t overdo it.
5. Spread on completely cooled loaf.
