π Ingredients (total batch):
- 307g riced cauliflower
- 160g medium grain rice (Nishiki)
- 65g spinach
- 150g mixed vegetables (peas, carrots, corn)
- 72g liquid egg whites
- 4 large eggs
- 133g pork & chicken sausage
- 218g chicken meatballs (Amylu)
- 56g oyster sauce
- 10ml fish sauce
- 9g sesame oil
π©βπ³ How I made it:
- Cook rice ahead of time (day-old rice works best π)
- Heat pan + add sesame oil
- Cook sausage + chicken meatballs until browned
- Add mixed veggies + spinach (yes, I just throw it in π)
- Push everything to the side β scramble eggs + egg whites
- Add rice + cauliflower rice
- Mix everything together
- Add oyster sauce + fish sauce
- Stir fry until everything is combined and heated through
