Ingredients
- 1 Tbsp ghee
- 1 onion, chopped
- 2 garlic cloves, minced
- ½ inch fresh ginger, grated
- 1 Tbsp turmeric
- 1 Tbsp coriander
- ½ tsp cayenne pepper (adjust to taste)
- 1 Tbsp curry powder
- 1 tsp cardamom
- 2 sweet potatoes, peeled and diced
- 1 zucchini, chopped
- 1 yellow squash, chopped
- 1 bell pepper, chopped
- 2–4 mushrooms, sliced
- 1 can coconut milk
- Fresh lime juice, to taste
- Chicken (optional add cooked or raw as preferred)
