Bitter Melon Soup
I forgot to give an update on our latest food adventure — bitter melon soup! 🥒
My sweet friend shared her Cambodian family recipe, which involves hollowing out the melon and stuffing it with ground beef or turkey, a special dried mushroom or fungi, rice noodles, and my homemade bone broth plus garlic. 🍄🍜 You can add soy sauce or coconut aminos for flavor and serve it over rice, though we skipped the rice this time. I also made little meatballs with the extra filling to toss into the soup!
My son said it tasted like "sour squash or a cucumber going bad" 😂... but Jim and I didn’t think it was terrible at all! Honestly, I’ll be making it again because the health benefits are amazing:
