My Favorite Way to Sneak More Veggies Into Dinner
I was making lasagna the other day and realized I'd never shared this trick before. I roast whatever veggies need to be used up, toss them with Italian seasoning, and roast at 400 for about 30 minutes. This time it was broccoli, mushrooms, and carrots, but it changes every time based on what's in the fridge. Once they've cooled a little bit, I throw everything into the food processor. What comes out is a perfect veggie mince that folds right into lasagna, or honestly anywhere you want to sneak in some extra plants. Have you tried anything like this? @Nadia Quraishi if only my dad had any idea who I was lol. Doctors definitely can’t be trusted with anything related to food and nutrition.

@Nadia Quraishi my mom was in the hospital for 5 bleeding ulcers and she was strictly on IV for 5 days. Her first meal in ICU….orange juice, coffee, a ham sandwich on white bread, and jello. Like wtf? The last trip my dad made to the hospital, they didn’t listen to us about him needing blended food and they left trays of solid food for him that went uneaten because he had no idea how to function at that point. We found out after he died that they hadn’t fed him the entire week he was there. They sent him home and he died hours later from malnutrition and all the drugs they loaded him with. My friends mom had stomach cancer and the hospitals RD was giving her “protein” shakes loaded with high fructose corn syrup. I honestly loathe western medicine.

What have you been up to this week?
I was busy working on so much business stuff today that I feel like I didn't check in properly to see how you're doing! 🫶🏼 Tonight I made some orange tofu with white basmati rice. Did you know basmati is lower on the glycemic index scale compared to other rice? Which means that it doesn't spike blood sugar as much as others. I also prepped chia pudding for the next couple days. I add Kite Hill Greek yogurt which is 17g protein per serving and is great for gut health. @Erin Norwood yogurt might be an ambitious task if you are just starting out. The internet tells me that if your yogurt is bitter, it is most likely caused by too much starter or the culturing was either too long or too hot. I use maple syrup because I’m canadian lol, though I did find a vegan hunnie product I’m loving!! Dates are also a good sweetener option for a lot of recipes.

🫘 Yesterday's cooking class was SO good
We cooked together live and the main ingredient was black beans. And both recipes were so unique AND delicious. In the class I talked about how I didn't grow up eating black beans regularly, so I still sometimes struggle with adding them into my diet. I have to be more intentional about it. Black beans are an amazing addition to a plant-based diet. They are packed with protein and fiber, they help keep you full, support steady energy, and great for your gut. @Nadia Quraishi I bought white navy beans because that was my only option for bulk purchases. I have never tried them in brownies though…I bet they would be awesome blondies!!
