Eggroll in a Bowl
I shredded some green cabbage, matchstick carrots, fresh onion, garlic, ginger, and shiitake mushrooms (optional). My protein this time was ground chicken breast although you could use pork or turkey if you prefer. Definitely added some low sodium soy sauce and Chinese mustard to give us that eggroll experience! Delicious!
