Wife wants to get me a graduation gift

In recognition of my graduation from law school, my wife wants to get me a nice watch....specifically a Rolex. (Money is not a challenge for her). She wisely asked for my input on such an extravagant gift.

I have a Submariner (gift from my father), so I'm thinking a nice dress watch like a date just and I'm not opposed to getting preowned.

I'm not super familiar with the Rolex options particularly those from the past. I know I do NOT want yellow gold or any gemstones. I'm curious what models you suggest. Any models to avoid?
