Okay I have to be honest with you. My meal prep has been really inconsistent lately. 😅
Life gets busy and I kept telling myself I'd do it "next week." But this week I actually did it and I already feel so much better.
Here's what I put together on Sunday:
• Wild rice
• Vegetable noodles
• Seitan stir fry (recipe testing)
• Air fried sweet potatoes
• Roasted bell peppers
• Chopped vegetables for salads
• Cut fruit
The best part is I can mix and match throughout the week. Different combinations every day so it doesn't get boring.
Did it take time Sunday? Yes. Was it worth it? Absolutely. I'm not scrambling at lunchtime or defaulting to something quick that doesn't make me feel good.
This is literally what I teach and sometimes I need a reminder too.
