Anyone else on the East Coast in the U.S. watching everyone lose their minds over this snowstorm? 😅
I ran to the grocery store the other day just to grab a few things I was low on. Not even storm-related. And it was packed. Later I saw people posting that shelves were empty.
Which is wild… because we’re talking about being home for a couple days, not months. It reminds me of the pandemic days when people were stocking up on 10 years worth of toilet paper.
But all of this did remind me of something I actually love about plant-based eating.
When you keep a few basics around, you’re kind of always fine. Staples like beans, lentils, rice, pasta, canned tomatoes. Nothing fancy, but things you can put together for a satisfying and delicious meal.
Fresh produce is great, obviously. But sometimes life gets busy, or we have an apocolypse of a storm lol.
Having a semi-stocked pantry just makes things so much easier..
