Foods I travel with
On busy days, when I'm out running errands or while traveling, I keep snacks with me. Here are some fruit bars, fruit bites, and dried edamame. Other foods I might keep in my bag include granola, nuts, individual nut butters, and applesauce. What are some foods you travel with?

Day 15: Lunch + Sweet Treat 😇
Lunch: 1 +1/2 ww wrap filled with in total 250 gr steamed veggies: courgette + broccoli seasoned with BBQ spices + black pepper. Wrap + chili mayo + corn, those steamed veggies+ 1/2 roasted sweet potato + 1 vegan chicken filet (no added oil) cut up..rolled up...me happy! 😋 - I also made Ami's double chocolate banana bread but I used organic wholemeal spelt flour instead of the usual oat flour. I also added bit of 0% brown sugar, topped it with chopped 40gr vegan 80% chocolate..pushed it a bit into the batter.... - Organic wholegrain spelt flour is my favourite flour since + 20 years. I will devour 1 slice later on the day....the rest I freeze in slices with baking paper in between. Now some needed rest..😃

I am in day 8 after the 7 day challenge in eating whole food plant-based low calorie, high density and I love that this way of eating, cooking, baking, sometimes snacking changed everything for me to the better!!! 👌✅️ 1/ I really do not miss organic chicken or smoked salmon or turkey. 2/ I have so much more energy after day 5 passed...and now being at day 8! With my chronic pain I can certainly need it! Yesterday I was too energized to go to bed early. That has never happened before in my 20 years of dealing with my cron pains! 3/ I lost up til today -2 kg in 7 days. ⬇️⬇️⬇️ 4/ I feel I lost weight, fysicly and feel so empowered, more energetic, got a glow on me in ditching the lactosefree butters, cow milks yoghurts...organic meat..fish .. 5/ no oils is much easier then I thought..the first 2 days it was more difficult but now I am used to it...I steam it in some water + spices in my microwave inverter in minutes..sometimes, I add 1/4 vegan stock cube (palmoil -free) to it. 6/ I eat totally different then what I used to do and my belly is completely full..I eat until I am full and discover so many other things to get creative in the kitchen like frittatas..herb vegan quiches no oil made with split beans, other flours like chickpea flour, white almond flour...etc. I will still bake my breads and sourdough breads but will make them more adapted to our needs now. 7/ others notice and complement me 8/ I never have a dip of energy anymore 1 to 2 hours after each meal cause I am full! Yesterday after breakfast: 5,5 hours no hunger nor cravings, after late lunch, the same etc.. 9/ just need to meal prep more and put foods in the freezer..get more organised and learn how to bake sweet things the more healthy way. And last but not least: AM SO GRATEFUL FOR BEING HERE IN THIS COMMUNITY WITH LIKE MINDED PEOPLE WHO ENCOURAGE EACH OTHER, SUPPORT EACH OTHER AND ARE GENUINLY KIND. I ALSO LEARN SO MUCH FROM YOU ALL AND FROM THE PROGRAMME thanks to you all and to Ami + Chelsea! 😊🤟❤️👌✅️❇️👊👏👏👏👏👏👏👏👏👏👏👏👏👏👏👏👏👏👏👏

When the only vegan option is salad... 🥗
Okay I need to vent a little.. My husband, mother-in-law, and I went to a new Turkish restaurant the other day. I had been fasting and was so ready to break my fast with something delicious. I love Turkish food, and honestly I usually feel pretty confident navigating menus. I typically have a quite a few options. So I scan the menu, I'm feeling good, and then I ask the waitress to confirm what's vegan. She goes to check with the kitchen and comes back with the news: basically everything has butter or dairy in it. The only thing I could eat was salad. Even the falafels had dairy..like what? For some reason, we didn't leave. Normally we would've just walked out, but we were hungry and I figured - we're already here, let's just order something. So I got the salad, and placed an online order for myself at a vegan-friendly restaurant nearby. The plan was to eat the salad, pack up our order when it arrived, and just move on with the night. Honestly? We probably should've just left. But sometimes it's complicated, especially when you're with family. And here's the thing. I know this comes with the territory. I also know there have probably been plenty of times I thought something was vegan and it wasn't. I just do the best I can when it comes to eating out. But I do this for my health, my ethics, and the planet. It would be so much easier to just let it slide sometimes. But this is what I believe in, and I'm not willing to compromise on that, even when it means just eating a salad sometimes.. Vegan restaurants also just seem to be disappearing one by one, which makes it even harder. Oh and here's the kicker...the restaurant ended up being so slow that we waited well over an hour for the food to come - to the point I had to go alone to pick up my vegan food from the other restaurant before they closed. It was overall a disaster lol and we normally would've handled it differently.. I guess a learning lesson for next time I'm in a situation like this. So I want to hear from you: if you're plant-based, how do you handle eating out with family or friends who aren't? Especially when you can't always control where you're going?

@Amanda Mirrlees Yes I used to substitute raw sunflower seeds for a lot of things and used cashews more sparingly lol. I still did mostly organic but was still able to keep things affordable.

@Amanda Mirrlees Yesss try the sunflower seeds, I soak them and use them instead a little lemon juice cuts the sunflower flavor depending on what you're making.
Vegan yoghurt bark squares with 🍌+🥜
I needed to use up some leftovers so I made this: Had 3 things left..bit of soy yoghurt, bit of peanut butter and 1/4 small banana...made this: Vegan yoghurt bark squares topped with 🍌 + 🥜 butter!!! * 1. Take a silicon mould. 2. In a small bowl, mix vegan yougurt with some kind of sweetener if you like that hey (I used 1 teaspoon vanilla stevia.) Cause my soy yoghurt is unsweetened. 3. Divide what you have between the cavities of your mold. 4.Top with a banana slice and push in the middle. 5. I put my more solid pb in the microwave to get a bit softer.. in a small ramekin I whisked in some soy milk. Mix through. I added dollops of the pb to each square+ pushed it a bit into the vanilla sweetened yoghurt. 6. Put in the freezer for at least a few hours or until firm. When you wanna eat them, unmold and wait a few minutes..yummy and not so sweet..it stopped my craving...win win..🙃🙂😂..but they melt easily...a bit messy to get them in your mouth..haha! 😊😋
