Taco Bowls
My favorite ! I actually did this with what I happened to have on hand. The most important part of taco bowls is the seasonings- like chili powder, onion & garlic powder, red pepper flakes, smoked paprika or chipotle. Half red pepper, chopped 1 zucchini, chopped Sautee until mostly cooked Add frozen corn & black beans- quantity to your liking. I did about 1/2 cups of each. Once all heated through, toss in spices and mix thoroughly. Serve over rice, with a side of raw salad greens, whatever you have. Nice with avocado, fresh mango, lime, cilantro. And ofc don't forget the hot sauce !! I happened to have leftover cashew cheese that was a perfect addition. 1 cup soaked cashews (at least 20 min in hot water) Juice of 1 lemon Splash water Dash Garlic powder Blend thoroughly You can use ACV if you don't have a lemon and you can also change up the flavor by adding different spices.

Garden Smoothie Bowl
This one you'll def want to try!! Base: 1 cup frozen blackberries 3-4 frozen bananas 5-6 dates ~1/2 cup water Toppings: Chopped strawbs Bluebs Homemade quick granola Local bee pollen Dried mulberries Dollop fresh PB Homemade quick granola: I use the One Degree brand of Oats because they are organic & certified glyphosate free. Heat up 1 tbl coconut oil, once melted, add oats & chopped nuts of your choice. Mix well. Watch closely on medium heat, do not let burn. Once oil has been absorbed and the nuts are slightly roasted, remove from heat. Add a dash of vanilla extract or powder, splash maple syrup & cinnamon to your liking. Let cool. Done. Shouldn't take more than 10 min from start to clean up. Always organic Always toxic seed oil free Always distilled water Always delicious! 🍌🍓🍒

Powerhouse Pre Work Lunch
I'm on my feet moving around constantly at work, so I need to make sure I'm fueled with food that is satiating, nutritious and won't weigh me down and make me lathargic. Veggie burger salad have been my recent go to because of how easy and fast they are. That's what I need a lot of the time, with having a busy schedule and a baby puppy. This is the cleanest brand of veggie burgers I've found on the market and they taste really good. While they were cooking, I added the sliced zucchini & my left over sweet potatoes. The beets were pre cooked from Sprouts. Dressing recipe: Tahini Miso Nutritional yeast Juice of 1 lemom Water I eyeball everything and taste as I go. Go light on the miso to start to not make it to salty. Blend in a blender and store extra in an air tight jar in the fridge. Great on almost everything ! Served over a bed of arugula or whatever lettuce you have.
