My favorite !
I actually did this with what I happened to have on hand. The most important part of taco bowls is the seasonings- like chili powder, onion & garlic powder, red pepper flakes, smoked paprika or chipotle.
Half red pepper, chopped
1 zucchini, chopped
Sautee until mostly cooked
Add frozen corn & black beans- quantity to your liking. I did about 1/2 cups of each.
Once all heated through, toss in spices and mix thoroughly.
Serve over rice, with a side of raw salad greens, whatever you have. Nice with avocado, fresh mango, lime, cilantro. And ofc don't forget the hot sauce !!
I happened to have leftover cashew cheese that was a perfect addition.
1 cup soaked cashews (at least 20 min in hot water)
Juice of 1 lemon
Splash water
Dash Garlic powder
Blend thoroughly
You can use ACV if you don't have a lemon and you can also change up the flavor by adding different spices.
