Farro!!!!
Hey one thing I've discovered... FARRO! It's a whole grain... Sort of like rice but on steroids. It's high protein, anti-inflammatory and I think it's yummy!! I use it instead of rice or noodles at times. Today I made it into a cold salad with veggies, provolone cheese and Italian dressing. It was really filling!! The Italian dressing is the only thing that's not great, but I'll figure that out too... when I have some time. 😎 Anyway, just wanted to share. Have a great evening!!❤️

I just made these pancakes for lunch yesterday and thought I would share.
Hi Everyone, I just had to share this recipe. This is for protein pancakes. We get 8 small pancakes which makes a nice lunch. very filling Blend all together ( I use an immersion blender so the oatmeal gets mushed up) 1 cup Quaker Old fashioned oats 1/2 cup Fage 0% fat Greek Yogurt 1 cup Bettern Eggs (basically egg whites real recipe calls for 8 egg whites) 2 tsp vanilla 1 tsp cinnamon ( i use 2) 1/2 tsp pumpkin pie spice Then I add a 1/2 cup of canned pumpkin puree Blend together more. Use 1/4 of mixture per pancake and put on hot griddle or pan and cook like regular pancakes (Roger does the cooking I do the mixing) Great energy source for cold days I top with sugar free maple syrup and thawed heated blueberries. Michelle this would be perfect with your syrup! I'd love to hear recipes that anyone else has made and loves too Shanna's vegan chili was awesome!
