Hi Everyone,
I just had to share this recipe.
This is for protein pancakes. We get 8 small pancakes which makes a nice lunch. very filling
Blend all together ( I use an immersion blender so the oatmeal gets mushed up)
1 cup Quaker Old fashioned oats
1/2 cup Fage 0% fat Greek Yogurt
1 cup Bettern Eggs (basically egg whites real recipe calls for 8 egg whites)
2 tsp vanilla
1 tsp cinnamon ( i use 2)
1/2 tsp pumpkin pie spice
Then I add a 1/2 cup of canned pumpkin puree
Blend together more.
Use 1/4 of mixture per pancake and put on hot griddle or pan and cook like regular pancakes (Roger does the cooking I do the mixing)
Great energy source for cold days
I top with sugar free maple syrup and thawed heated blueberries.
