This is one of my go-to meals when I need to get back to feeling fuelled, not just full!
It’s balanced, high in protein, and takes less than 15 minutes to throw together 🙌
Perfect if you've had a few days of quick grab-and-go food that's left you feeling a little sluggish

What You’ll Need 🛒:
- 1 chicken breast (butterflied & flattened)
- ½ small avocado
- ½ packet Veetee jasmine rice
- A handful of spinach
- Sriracha mayo (or plain mayo + sriracha)
- Sesame seeds
- Cooking spray (we use Frylight, but anything works)
Chicken Seasoning
- Salt & pepper
- Chicken seasoning
- Garlic powder
- Paprika
- A drop of olive oil to rub in
How to Make It 👩🍳:
- Butterfly and flatten the chicken breast
- Rub in the seasoning with a little olive oil
- Pan fry in cooking spray for 8–10 mins until cooked through
- Slice avocado and season with salt, pepper + chilli flakes
- Microwave your rice
- Assemble your bowl: spinach, chicken, avocado, rice
- Top with sriracha mayo and sesame seeds
