MACRO BREAKDOWN Calories 373 Carbs 33.1 Pro 30.8 Fat 12 Ingredients, this makes 4 servings of pancakes: - 1 cup (225g) cottage cheese - 1 cup (80g) rolled oats - 5 eggs - 2 tsp. cinnamon - 1 tbsp. Queens sugar free maple syrup - 2 tbsp. coconut oil Topping - 35ml Queens sugar free syrup, 100g salted caramel yopro, 100g blueberries 🫐 😉 Directions: - Place all ingredients into a blender or food processor and blitz together until smooth. - Heat ¼ of the coconut oil in a large frying pan over low-medium heat, pour about ¼ cup of batter per pancake, and repeat until the pan is filled. - Cook until you start to see bubbles form on the surface of the pancakes, about 1-2 minutes. Then, flip and cook for another minute or until golden brown on both sides. - Repeat this process until all the batter has been used - Add in those toppings 😋

Happy first day of the challenge! I made a very easy but tasty meal for dinner last night xx Chicken breast cooked in the air fryer, oven roasted potatoes and canned peas and carrots. Ran out of frozen veg, so this was a quick alternative to get veggies in. Topped off with a bit of Perinaise 😋😋😋
