Hello! I’m new here and wanted to share my journey! I am not a beginner level baker- I’m actually quite experienced and have been in the pastry realm for more than 7 years. I joined because I am having difficulties with my Macarons in my new house. I’ve made them successfully in the past but the three times I’ve made them in my new house they’re not turning out right at all!

Did you move to a new state? Gas to electric oven? Definitely get an oven thermometer and a hygrometer to check humidity in kitchen.

So can we have a look, what type of macaron everyone is making for Valentine😍 ??? Love to see some pictures if you wants to share. 🥰

These aren't for Valentines but this is my first batch using Crystal's recipe.
First try!
Okay this is my fifth time trying macaroons but my first time using your recipe. And I'm not going to lie your recipe intrigued me because it only uses the mixer but also dumping raw egg whites into my meringue was a crazy thought. The first tray almost perfect! Slightly lopsided on the back side of the tray that was like deepest in my oven. So I decided for the second batch to rotate the tray halfway through. And as soon as I rotated the tray and set it back down every one of them cracked 😭 I also have a convection oven and I forgot to turn my fan off. Overall I'm super happy. And the fact that I can do the macronage with my mixer is crazy!!

@Inna Alaverdyan my last tray seems to have soft tops that cave in the second you touch them.
Help!
I know this is not the right consistency but I could have mixed all day and gotten nowhere further. I even added extra egg whites at the end to ‘thin it’ and still did not run off the spoon. I’m deflated. As were the shells that this produced. First time using Crystal’s method.

Attempt #2 with crystals recipe Definitely better than the first, not overcooked at all. I did 17 minutes at 295*F this time. I think I should’ve air dried them longer than what I did (5minutes) but I’m still way happier with how these ones came out! I did a peach flavor

Looking good. No need to air dry with this recipe though. Pipe and then put in oven with door opened slightly for 5-10 minutes.
