Protein Breakfast “Biscuits”
I love this recipe and while I don’t often have one for breakfast, they make a great lunch to grab and go. I freeze them and then defrost one on the day I’ll eat it. They are really satiating.
400g chicken or turkey mince
1 small onion, diced
6 eggs, lightly beaten
1 1/2 cups almond flour
1/2 cup coconut flour
1 cup mushrooms, chopped
1/2 red pepper, chopped (or a roasted one)
1 cup cheese (I use Emmental but any cheese works - I’ve tried feta, halloumi, cheddar and stilton)
1 cup spinach
Salt and pepper and any other spice you fancy (I add a teaspoon of chilli flakes)
Sauté the onion with the mince in a little olive oil and then add the mushroom and peppers and sauté until soft.
Mix all the ingredients together well in a bowl and mould into 10-12 round biscuits.
Place on a baking tray and bake in a preheated oven for 20-25 minutes at 220oc (fan) until crispy and slightly ground around the edges).
