Dessert but make it healthier 👀
I’ve been trying different variations of Greek yogurt dessert bowls and here are some that I’ve found pretty good: 1) non fat Greek yogurt with zero sugar cheesecake jello (1/4 packet), no sugar maple syrup, and chocolate chips (2 servings) 2) non fat Greek yogurt with zero sugar vanilla jello, no sugar maple syrup, and chocolate chips Helps get that late night dessert in while not blowing up the calories. What healthy dessert variations have you tried?
Breakfast Casserole
I shook up my breakfast meal prep last week and it was so delicious, I’m doing it again this week! Ingredients: 1 lb breakfast sausage 1 green bell pepper, diced 1 yellow onion, diced Bacon bits Seasonings: garlic powder, Italian seasoning, salt, pepper 1 bag Ore Ida Crispy Crowns 1 cup shredded Mexican cheese 6 eggs 1 1/4 cup milk 1. Preheat oven to 400°F. Spray a 9x13in casserole dish with cooking spray and set aside. 2. In a frying pan, cook the sausage meat, bell pepper, and onion. Once meat is browned and veggies softened, season with listed seasonings and 4 Tbsp of bacon bits, and continue to cook for 2 minutes. 3. Turn off heat and add the bag of Crispy Crowns. Stir to combine. 4. Pour contents into the prepared casserole dish and stir in 1/2 cup of Mexican cheese. 5. In a separate bowl, whisk eggs and milk together, seasoning with additional salt and pepper. Pour egg mixture over contents in casserole dish. Top with remaining cheese and 2 Tbsp of bacon bits. 6. Bake for 45 minutes or until no longer runny. You and your family can all share this one morning or, if you’re meal prepping like me, slice it into 6 equal portions, place in meal prepping containers, and refrigerate for up to 6 days. Enjoy the yumminess!!!!

Chicken Bacon Skillet
Meal prepped this for lunch last week and it’s a keeper. Here’s the details 5 servings 614 calories 24g Carbs 63g Protein 28g Fat Ingredients - 2 pounds chicken breast - 1 yellow onion - 10 strips beef bacon - 1 can cream of chicken soup - 1.5 cups non fat Greek yogurt - 28 ritz crackers (crushed) - 8 servings sharp cheddar cheese (non fat if you can find it) Preparation - Dice your onion - Cut beef bacon into thin strips - Cook beef bacon in a skillet over medium high heat - While beef bacon is cooking, dice chicken and season (onion powder, paprika, salt, pepper) - When bacon is finished, remove and add onion into fat to cook - Add chicken in with the onion once onions begin to soften - In a separate pot add 1 can cream of chicken soup, non fat Greek yogurt and let warm - Smash ritz crackers and add to pot with cheddar cheese - once chicken is cooked through (165 degrees F), Add chicken and onions into the pot - Top with beef bacon - Stir to mix and enjoy
