I shook up my breakfast meal prep last week and it was so delicious, I’m doing it again this week!
Ingredients:
1 lb breakfast sausage
1 green bell pepper, diced
1 yellow onion, diced
Bacon bits
Seasonings: garlic powder, Italian seasoning, salt, pepper
1 bag Ore Ida Crispy Crowns
1 cup shredded Mexican cheese
6 eggs
1 1/4 cup milk
- Preheat oven to 400°F. Spray a 9x13in casserole dish with cooking spray and set aside.
- In a frying pan, cook the sausage meat, bell pepper, and onion. Once meat is browned and veggies softened, season with listed seasonings and 4 Tbsp of bacon bits, and continue to cook for 2 minutes.
- Turn off heat and add the bag of Crispy Crowns. Stir to combine.
- Pour contents into the prepared casserole dish and stir in 1/2 cup of Mexican cheese.
- In a separate bowl, whisk eggs and milk together, seasoning with additional salt and pepper. Pour egg mixture over contents in casserole dish. Top with remaining cheese and 2 Tbsp of bacon bits.
- Bake for 45 minutes or until no longer runny.
You and your family can all share this one morning or, if you’re meal prepping like me, slice it into 6 equal portions, place in meal prepping containers, and refrigerate for up to 6 days. Enjoy the yumminess!!!!
