Breakfast Casserole
I shook up my breakfast meal prep last week and it was so delicious, I’m doing it again this week!
Ingredients:
1 lb breakfast sausage
1 green bell pepper, diced
1 yellow onion, diced
Bacon bits
Seasonings: garlic powder, Italian seasoning, salt, pepper
1 bag Ore Ida Crispy Crowns
1 cup shredded Mexican cheese
6 eggs
1 1/4 cup milk
  1. Preheat oven to 400°F. Spray a 9x13in casserole dish with cooking spray and set aside.
  2. In a frying pan, cook the sausage meat, bell pepper, and onion. Once meat is browned and veggies softened, season with listed seasonings and 4 Tbsp of bacon bits, and continue to cook for 2 minutes.
  3. Turn off heat and add the bag of Crispy Crowns. Stir to combine.
  4. Pour contents into the prepared casserole dish and stir in 1/2 cup of Mexican cheese.
  5. In a separate bowl, whisk eggs and milk together, seasoning with additional salt and pepper. Pour egg mixture over contents in casserole dish. Top with remaining cheese and 2 Tbsp of bacon bits.
  6. Bake for 45 minutes or until no longer runny.
You and your family can all share this one morning or, if you’re meal prepping like me, slice it into 6 equal portions, place in meal prepping containers, and refrigerate for up to 6 days. Enjoy the yumminess!!!!
