Chicken Bacon Skillet
Meal prepped this for lunch last week and it’s a keeper.
Here’s the details

Ingredients
  • 2 pounds chicken breast
  • 1 yellow onion
  • 10 strips beef bacon
  • 1 can cream of chicken soup
  • 1.5 cups non fat Greek yogurt
  • 28 ritz crackers (crushed)
  • 8 servings sharp cheddar cheese (non fat if you can find it)
Preparation
  • Dice your onion
  • Cut beef bacon into thin strips
  • Cook beef bacon in a skillet over medium high heat
  • While beef bacon is cooking, dice chicken and season (onion powder, paprika, salt, pepper)
  • When bacon is finished, remove and add onion into fat to cook
  • Add chicken in with the onion once onions begin to soften
  • In a separate pot add 1 can cream of chicken soup, non fat Greek yogurt and let warm
  • Smash ritz crackers and add to pot with cheddar cheese
  • once chicken is cooked through (165 degrees F), Add chicken and onions into the pot
  • Top with beef bacon
  • Stir to mix and enjoy
