Lunch - Goat Cheese & Veggie Roll-ups
Goat cheese grows on you, I promise. But in the beginning, you either love it or you hate it! It shows up on so many plans (along with goat yogurt & goat milk) so let's figure out how to make it delicious! As an aside - I chatted with a client yesterday and she is RIDICULOUSLY creative in the kitchen - she told me she blends her goat cheese into her soup to make them creamier... and it masks the taste that puts a lot of people off! Veggie soup that's creamy & blended. I'll take 4 please.

Dinner - Mild Curry Omelette
The egg. This one gets some people riled up! Katie and I were having an egg discussion last week - she LOVES eggs whereas I could take them or leave them - I was given them once as a baby and it was a hard no, then I didn't start eating them again until I was 21 - even now they give me a "meh" kind of reaction. Here's a way to prepare your eggs. Don't like curry, change up the spices! What's your favourite way to eat eggs?

Dinner - Roasted Chickpeas & Veggies
This recipe is one serving - want to make more? Double or triple the amount! Ah, the legume category. I never know what to do with them other than "airfry my chickpeas so they're crunchy and throw them on a salad" - it's great the first few times, but then gets a little boring. They don't have to be boring. Neither do veggies - roasting veggies actually brings out the natural sweetness, changing up the flavour. Also - did you know that chickpeas are also called garbanzo beans? Fun fact of the day for you there :) Even if you make this same dish over and over, you can always change how it tastes by switching up your herbs & spices!
Dinner - Roasted Chickpeas & Veggies
Red Lentil Crackers
1 tbsp coconut oil 90 g red lentils (or your serving size) pink Himalayan salt seasoning ideas: rosemary, red paprika, garlic pepper Soak lentils for 3 hours. Drain and pulse in food processor/ blender until paste like (add water as needed) Spread evenly on parchment paper and season Bake at 350 degrees Flip over after 15 minutes Bake until pliable for pizza crust Bake until crisp for crackers This is still a work in process. I tripled this recipe and then divided into serving sizes. Freezes well. Perfect for meals on the go. Let me know what you think and improvement ideas!
Lunch - Chickpea & Mango Salad
This is one serving - adjust your gram amounts as per your personal plan! Emily and I were talking the other day about how much we love chickpeas & then this recipe fell into my lap. I never thought of creating a salad with mango, but this one.... is a gem! Of course, you can switch out the fruit for any other that you'd prefer - strawberries and balsamic go together quite nicely! If you have the "soap gene" like me, the cilantro is optional 🤣
