Questions We know it tastes amazing, but who is brave enough to try saying "Boudiou qué c’est bon !" after two glasses of Provençal wine without twisting their tongue? 🍷🤪 If Bouillabaisse means "boil and lower the heat," how many of us are going to miss the boat and just boil it until the smoke alarm rings? 🚨💨 Text The Bouillabaisse This soup comes from Marseille . Every day, the fish arrives fresh at the old pôrt, directly from the sea. Meaning : The Two Pieces of the Word The name is a simple, direct instruction split into two parts: • Bouillir – meaning "to boil". • Abaisser meaning "to lower" or to reduce the heat. English boil (v.) + abase So, the meaning of bouillabaisse is "boil and lower." Originally, it was a fisherman's dish, prepared with unsold fish that their wives sold at auction by public outcry. It used to be a poor man's dish! Bouillabaisse is a French fish soup or stew , made in Provence with typical ingredients . Fresh vegetables: onion, leek, garlic, tomato. Olive oil . Fresh herbs: basil, parsley, fennel, thyme, bay leaf, real saffron for flavour, and salt. Plus A large collection of fish . And Water . The soup is brought to a boil over high heat, then the heat is reduced. Serve the fish on a plate on a slice of French dry bread, then pour the soup over everything. You can enjoy it with an aioli. Accompanied by a "rosé de Provence" or a local white wine, served chilled without ice, of course! The best way to enjoy it is in the old pôrt of Marseille, in the open-air restaurants, while watching the boats on the Mediterranean Sea ! It’s an absolutely delicious meal !
