Honestly, I love it when Past Maddie actually looks out for Future Maddie. 😅
When I actually prioritize meal prep, tracking macros and hitting my protein goals becomes infinitely easier. Case in point: today’s lunch. All I had to do was reheat this prepped-ahead Korean beef bulgogi rice bowl and top it with two eggs over-easy. I also had some carrots and cucumbers on the way out the door to take Kestrel to her swim lesson, but they didn’t make the photo op.
It’s the little wins that keep me going forward when I feel overwhelmed.
