Quick nutrient dense lunch
Honestly, I love it when Past Maddie actually looks out for Future Maddie. 😅
​When I actually prioritize meal prep, tracking macros and hitting my protein goals becomes infinitely easier. Case in point: today’s lunch. All I had to do was reheat this prepped-ahead Korean beef bulgogi rice bowl and top it with two eggs over-easy. I also had some carrots and cucumbers on the way out the door to take Kestrel to her swim lesson, but they didn’t make the photo op.
​It’s the little wins that keep me going forward when I feel overwhelmed.
