Just wanted to share that I tried this "chickpea only" bread recipe I saw on YouTube and it turned out surprisingly delicious.
Here's how it works:
- soak 200g chickpeas in water overnight (or a few hours at least)
- drain the chickpeas and put in a blender with 180ml of water
- blend until the chickpeas are completely pureed
- add 25g linseeds, 40g psyllium husk powder, 5g salt, 1 and a half tsp baking powder, 3/4 tsp baking soda, 1 and a half tbsp lemon juice
- blend again
- scoop the dough out of the blender and put it onto a sheet of non-stick baking paper.
- it's surprisingly easy to work the dough and make it into a nicely shaped loaf of bread
- bake in the oven at 180° celsius for 50 minutes
I didn't think it would rise, as it has no yeast, but actually, it did! And it really tasted delicious! Even my non-coeliac 13-year old, relatively picky son loved it!
The only problem I have with chickpeas is that I have huge trouble digesting them. They really give me gas and bloating... not nice! So even though I love them, I don't use them often and I guess I won't be making that loaf often because of this - but I recommend it to anyone who doesn't struggle digesting chickpeas! It's really good!
