Hello, I am wanting to try the method where the dough is kept in the fridge until I'm ready to shape it and bake.

I’ve found Sandra to be the most helpful master baker on YT. I used to bake back when my oldest child, Abigail, was about 3 or 4. She was up on the counter with me watching everything I did and now, 24 years later, she gave me some of HER starter and I am back into baking sourdough! There’s a lot more good information on baking nowadays and Sandra’s YT channel has helped me get back into the swing of things!!
