Artisan Bread Scoring (not in loaf pan) - my dough is too soft after the rest: Can I skip the 40 minute rest? Also, the finished product color is anemic. Will skipping the rest help with that as well?
Sandra's Coaching Call Rescue! - Flat Loaves 🧐
What to do to avoid flat loaves? Sandra not only discussed the options, but demonstrated in real time the fixes for wet dough and over proofed dough! It was so useful to see the properties of the dough, how to handle the dough, and what to do to avoid the dreaded flat loaf. @Sandra Brenes Good point! Inspired by your family story, I cut my flat loaves and they taste great. You can see I always like butter on my sourdough. They could also be toasted in the oven and served like a crostini or bruschetta appetizer. I don't think anyone would know that it was an unintentional flat loaf! PS: My einkorn loaf is in the oven. It handled just like a wet dough so I used your demonstration today to shape the dough. Thank you!
Basic Pancake Batter to Delicious Sourdough Waffles
I am glad I made the Basic Pancake Batter to learn the proper consistency of the starter. My starter consistency varies so now I have a target to shoot for. After evaluation, I mixed in my sourdough starter and proofed in the refrigerator for 3 hours. You can see how the batter changed in the pictures below. The finished waffles were fluffy with air pockets showing the effects of the starter. They were delicious! Batter pics: 1. Basic Pancake Batter 2. Refrigerator proofed sourdough batter

Hello all :) happy Thursday! I started my starter yesterday and nothing happened. I mean nothing. Do I trash it and start fresh or feed? Help!

@Wendy Hawkins Hi again. I have been using two small thermometers from Amazon to monitor the temps in different spots - in the kitchen, a cool room, etc. My bedroom with the a/c on, blinds drawn and doors closed is my go to if the kitchen is too hot. I live in So Cal west of LA. It gets very hot and has played havoc on my starter as I develop my starter skills. I know Las Vegas is significantly hotter!

@Wendy Hawkins I am on the same timeline! Back to the first Artisan Bread recipe, I just mixed my dough and will bake it off in the morning. Please post your results 😊 Are you going to the BBW Coaching call tomorrow? I will be there. It was so valuable last week. It is a conversation rather than a lecture. I highly recommend.
