Peace family, it has been a while since I've posted. I apologize. How is everyone? I hope everyone is well. I did okay on our last challenge but I broke it early and ate some cheese. 😁I am doing a raw lifestyle sometime this week for the Spring/new year. What new challenge are you doing?

Challenge community
To Chief El & plant base challenge community: I must admit this challenge has been very difficult fir me to stay motivated & involved in. I apologize for not not giving of myself wholeheartedly as things have been difficult for me on a daily basis. Everyday It's all I can do to push thru my day,so please send positive vibrations my way. My 77th bornday is in April & I must encourage myself more. 👀✨️🤔

Pink pineapple salsa
Recipe: 1 Pink Glow Pineapple, diced 2 jalapeno pepper, deseeded and diced 1 red bell pepper, diced 1 sweet Vidalia onion, diced 1 small bunch of cilantro or recao, finely chopped 1 TBSP salt ½ cup Key lime juice Stir together and enjoy with tortilla chips or use as a topping

Okra Stew
Ingredients: 1 cup diced onions 1 cup diced peppers ½ cup diced celery 2 cups chopped okra ½ cup chopped scallions 2 cups diced tomatoes ½ cup olive oil 2 cups of water 2 13.5oz cans of coconut milk (full fat) 2 TBSP Garam Masala 2 TBSP ground ginger 1 tsp crushed red pepper 1 small bunch each chopped cilantro/oregano 1 tsp dried thyme Salt and pepper to taste In a 6-8 qt sauce pan saute the onions , peppers and celery in the olive oil on medium high heat. Saute until translucent. Add spices, okra, tomato and crushed red pepper. After everything is coated with the spices, add water and bring to a boil. Reduce to simmer, add coconut milk. Cover and simmer for 30 minutes. Pull off the heat and add scallions and herbs. Salt and pepper to taste. Enjoy!

I tried this stew today forgot to take a pic but it was good I love okra I do a bake kind that's really good I have a lot of okra in my freezer from last year I grow them, I drink okra water also💚
