BBQ JACKFRUIT SLIDERS ON PRETZEL BUNS
- Young green jackfruit (in brine or water) – 3 cans (20 oz each), drained and shredded - Yellow onion – 1.5 cups, thinly sliced - Garlic – 1 tbsp, minced - Olive oil – 2 tbsp - Smoked paprika – 2 tsp - Chili powder – 2 tsp - Cumin – 1 tsp - house vegan BBQ sauce – 2.5 cups - Pretzel slider buns – 12 - Pickled red onion or coleslaw (optional for garnish) Prep Procedure: 1. In a tilt skillet or large sauté pan, heat oil. Sauté onions until golden. 2. Add garlic, paprika, chili powder, and cumin. Stir until fragrant. 3. Add shredded jackfruit. Sauté to dry out excess moisture, about 5–8 minutes. 4. Stir in BBQ sauce and simmer for 10–15 minutes until thick and sticky. 5. Adjust seasoning and hold hot for service. 6. Toast pretzel buns lightly. Scoop ~1/3 cup BBQ jackfruit per slider. 7. Optional toppings: pickled red onion, slaw, or dill pickles.

Peace, family! I am so grateful for Chef Yosef. Since connecting with him, I've been eating more live foods from the farmer's market and I feel amazing! The watermelon is juicier than the supermarket. My granddaughter who did not like watermelon from the supermarket can now eat watermelon! My grands and I definitely needed this reset. I see some of our soul tribe members in the community! I'm excited. One day, we should do some type of 3 day or 5 day vegan, juice or raw food challenge. It's easier when we do things together. So happy to be part of this community. I love you all. Eat well!

@Matilda Boulware Good evening! Thank you so much for watching and supporting, Sister. I am thankful for you. I'm glad you checked out the platform. Chef has some wonderful things in store for us. I'm especially grateful for his assistance with creating our own personal menus, based on our needs, because I'm interested in more raw food menus. What type of eating lifestyle piques your interest? I've had a biblically "clean" eating lifestyle, pescatarian, vegetarian, vegan and raw vegan. The one I like the most is raw, but it takes a lot of discipline. I love cooked foods, but the older I get the harder it is on my body. Seems peculiar. Lol. Have a wonderful rest of your week.

@Matilda Boulware that's so good to hear. Eliminating a little at a time can make it easier to transition into a healthy lifestyle. The hardest meat for me to give up was chicken. In regards to meat products, cheese was very hard, but I've been doing better with that lately. I decided to give up cheese, because it became hard for my body to digest, the older I got. You are more than welcome, sister. I feel better on a plant based lifestyle especially the more fruits I incorporate.

Ingredients: Chopped Romaine Scallions/Dill/Parsley/Sage Sliced Watermelon Radish Diced Avocado Everything Bagel Seasoning Dressing (Blend in a high-speed blender) 2 peeled Blood Oranges/1 Fresno Chili/2 Cloves of Garlic/1 Shallot/1 Thumb of Ginger/1/2 cup of Tahini/1/2 cup of water/Salt & Pepper to taste
