Bake of the Week: Mixing the Hot Dog Bun Formula
So I spent a bunch of time editing a video, adding titles and captions, etc. What's attached is not that. I'm not sure what happened, but that video is gone. So here's a video at 2x speed of the mixing. Highly recommended for fans of Kitchen Aid ASMR.

Baguettes
Didn’t have time to bake last week, so I went for it with the baguettes today. I skipped chilling the dough before shaping and opted for a same-day bake. They weren’t getting enough color, so baked at 500 for 25 minutes then reduced to 425 for last 5 minutes. Removed steam after 15 minutes. The bottoms are pretty dark (see crumb shot), so need to fine-tune those times. The dough was very manageable. I need more practice shaping and scoring, but it tastes like a baguette! 🥖

Sourdough Seeded Sandwich Bread
I hope everyone is having a great July 4th weekend! Here's the next weekly recipe as promised. I'm pretty happy with how this one turned out. The Yudane method to gelatinize some of the whole wheat flour created a really soft and enjoyable bread. Give this is one a try, and play around with seed and flour choice to make it your own.

Help - my sourdough doesn’t taste…sour!
I worked really hard on my starter recently, but my first batch didn’t taste very much like sourdough. Any suggestions for me?
