On Sundays (sometimes Monday morning if we have Sunday plans) I've been working on getting in the habit of the first few hours of my day is for weekly food prep for the last few months and experimenting with recipes. I'll make pancakes, french toast, egg cups, overnight oats, etc. that can be refrigerated or frozen for breakfasts. I prep our lunches for the week. I also will cut up produce and make little grab and go snacks for the kids and granola bars. I will say I plan all of our meals and grocery lists a month ahead to budget better and be able to bulk shop when possible.
I've been really trying to homemake as much as I can with less ingredients or better ingredients for all of us and cut out dyes completely. I don't count protein, macros, micros... or where to begin I just have the goal of less ingredients and more color in mind with a protein source where possible.
This week I made Greek/Mediterranean bowls for our lunches and topped them with tzatziki. They're delicious! I used chicken, kalamata olives, sundried tomatoes, cucumbers, pepper, and quinoa.
I have learned it's possible to eat healthy when you're consistent with your schedule and have a plan especially when you're a busy family with 4 kids and conflicting schedules.
If anyone has any meal prep lunch ideas or dinners I'd love to hear them!! Pinterest has been super helpful but I'd love to try your favorites. (Can't do any seafood my daughter and I have an allergy.)
