Yes, refine sugar takes nutrients out. I usually use honey or palm sugar in my cooking and morning self blend coffee w chicory. However, in the food /culinary industry, we eat with our eyes and varied color of ingredients added to make a dish can be joyful. The key is like you said, be mindful of its use.
