OCR Tools
I was wondering if anyone could tell me what they think the best OCR tools there are out there, with zero retention if possible. I played around with Mistral, PDF vector, Tesseract.... Was wondering if anyone has any better suggestions?

Hey @Zamir M have you tried AWS Textract? @Zamir M AWS has excellent security options but you usually have have to configure these yourself. Its not like a SaaS where everything is pre-built out of the box (i.e. Adobe OCR). But the beauty of that is that you really get to understand what is (and isn't) within your app's architecture. POV: 10+ years as an cloud security architect, AWS Solutions Architect.
