👋 Hey everyone, Nicky here. I’m delighted to step in as your new host for this community! I’ve already been in touch with some peeps via DM, and in the background I’m sending an email out to all our fab members so nobody misses the update. My aim is simple: continue the amazing work that @Luke Gilbert started, keep this community buzzing with good conversations, practical brewing tips, and a place to share what we all love - coffee. ☕ To kick things off, I’d love to hear from you: where are you sipping from today + what’s in your cup? My first of the day WAS a Rebel House Espresso from javathehutt.ie roastery. It's a fab bean from Brazil. We also serve it in our converted horse box coffee trailer which is parked up at our local football club full time. I'm fully caffeinated and ready for the day!

@Nicky Hughes Haha 😜 Thank you mate. Honestly it’s just converting one Costa customer at a time. People in the country need to value the drink they pay good money for. Unfortunately but also fortunately the generation of Costa customers is dying off/no longer going there so it’s giving the chance for small business and new generations to enjoy better drinks. We just aim to impress everyone that steps in the door :)
Non-dairy options for coffee drinks
What is your favorite dairy substitute for milk drinks? I have used almond, soy, oat and pea. In my experience pea came close to milk, but carb heavy. Second was oat. Almond was not that great. Now settled for soy. Tends to curdle if I heat it too much. Suggested temp is to keep it under 150, too cold for my taste. These days switching between lactose free low fat and soy. The milk shoot’s up my sugars while with soy it is more controlled.

Oat is the best for the most milk like replacement. I highly recommend Califia Farms Oat Barista Milk. Its the one we've used for years and years and I would argue its top 3 best out there.
What Water Filter do you use?

We use a BWT Bestmax XXL. I went away from the idea of the 'premium' one for the additional minerals because I've not had the best reviews from it. I am in the process of adding a magnesium cartridge to my filter setup to have higher quality water running through the machine.

@Luke Gilbert sorry, mines the XL not XXL We worked out that filter will do me about 6 months worth of useage based on previous numbers They do a great job 100%

@Benjamin Sand No need to apologise 😂 I would say the scale is tipped towards espresso based drinks as it’s everyone’s standard routine. There are a lot of places where you can get nice fancy pour overs. Not saying they aren’t predominant but your espresso drinks far outweigh. It varies a lot, but as a standard you‘ll get well extracted medium to slightly darker roast coffee with your milk drinks due to the ability for it to cut through milk and still be a nice strong drink. A lot of places (like us) serve second choices or guest espressos so you have an option. I think the main difference in culture is that people are used to a higher quality of coffee across the board, so this means in order to stand out, you need to be knowledgable and do your best with the beans you have.

Time or weight?
I use a pretty old vibimme domobar, think it must have 12+ years now. This one isn't the most precise espresso machine when it's coming to pressure and temperature. So it's quite challenging to get the same perfect espresso out of it using the exact same setup twice. 😅 So, what I asked myself over and over again is what's more important: time or weight? Well, I've learned in this post, that many baristas agree on the perfect time being about 28 sec aaaand most prefer the 1:2-ratio with 18grams in and 36 out. But, with a machine that's not toooo precise you may choose one of them. most of the time I'll end up at about 30-36 grams in between 25 and 30 secs. But sure taste varies as well. 🤷🏻‍♂️ What do you guys think is more important:

@Luke Gilbert Personally time is the biggest factor (my opinion) but equally if you aren’t eliminating variables you have control over, then it will be different everytime. There are too many variables outside of your control like humidity, grinder temp, grinder retention and so on. If you have a coffee that’s 18/19g in everytime and you aim for a time where that bean works best (as some prefer quicker shots, some prefer longer shots to get a nicer output) then time is the only variable you have to worry about and you can get it to a point you’re happy with and keep it around there. Theres one other major variable most people don’t think about at home cause usually they have fancy tools etc but puck preparation can affect time hugely without touching grind size or dose. Thats just my 2 cents
