I guess, this happens if the file dimensions match portrait ratios, even if it looked landscape in Canva. Double-check your pixel width is greater than height before exporting. Did Printshrimp show the preview in landscape before you sent it?

I use Pinterest a lot. And yes, people can copy, but the upside in traffic usually outweighs the risk. Adding a watermark or logo on your pins helps. Have you thought about using Idea Pins too? They’re harder to copy and get good reach.

Etsy will always send order notifications to the email address linked to your Etsy account. The same one you used to register or the one currently listed under your account settings.
